Bax Virgin Mojito

The botanicals here combine so beautifully: lime, mint and Bax Verbena. This is a classic combo with a couple of twists.

• 50ml Bax Botanics Verbena
• The juice of half a lime
• 6 fresh mint leaves, bruised
• 15ml sugar syrup
• 50ml sparkling grape juice
• 20ml soda water
• Ice
• Fresh lime and mint to garnish
Stir together the Bax Verbena, lime juice, mint leaves and sugar syrup in a glass. Add the ice, grape juice and soda. Mix gently and garnish with lime slices and mint.

Sweet & Spice

This is a little like an alcohol-free  No1 cup. The great flavours here make an unusual change from a fruity or tonic based cocktail. Serve individually or as a party jug.

• 50ml Bax Sea Buckthorn
• 5ml 3/4oz Spritz syrup
• A dash of Monin spice syrup
• 60ml Diet Coke
• Ice
• Sliced strawberries, orange and lemon to garnish
Mix all the ingredients together in a glass or make a larger amount to share with friends.

Verbena Iced Tea

The gorgeous fragrance of bergamot with a soft bite from tannins combine in a multi-layered drink that’s bright and uplifting.

• 50ml Bax Botanics Verbena
• 75ml Earl Grey tea
• 15ml apple juice
• 10ml sugar syrup
• Ice
• Lemon zest to garnish
Make the Earl Grey tea as usual with boiling water, squeezing plenty of flavour out. Remove the teabag or strain the tea and leave to cool. Chill in the fridge. Now stir together the measured ingredients, pour into a tea glass over ice and garnish with a strip of lemon zest.


If you want to impress your friends with an alcohol-free aperitif try this – packed with flavour this Southside has a depth and intensity that’s second to none.

• A few ice cubes

Combine the ingredients in a cocktail shaker, shake well and strain into a chilled glass. Garnish with a mint leaf – optional.

Peaty River

Deep, dark flavours of coffee, orange and passionfruit create a luxury drink, perfect after dinner when you’re relaxing and fancy a little indulgence.

• 50ml Bax Sea Buckthorn
• 20ml passionfruit syrup
• 1 level tsp instant coffee
• 6 ice cubes
• 80ml soda water - chilled
• Orange to garnish
Add the Bax Sea Buckthorn, passionfruit, coffee and ice to a cocktail shaker. Shake well. This creates a gorgeous bubbly crema on top of the drink, carefully pour into a glass and add soda. Stir gently and garnish with orange.

The Velda

Hedgerow foraging in a glass: the flavour of elderflower, spring herbs and fresh apple combine with the light bitter notes of Mediterranean tonic.

• 5ml Monin Green Apple Syrup
• 5ml Belvoir Elderflower Cordial
• 150ml Fever-Tree Mediterranean Tonic
• Ice and a straw

This is such a simple serve, all you have to do is mix the ingredients together in a tall glass and top up with ice. Garnish with edible flowers or a slice of apple. Elderflowers would be lovely if you are serving the drink in June, or maybe apple blossom.

Shark Bite

A short snappy cocktail to energise the taste buds. Sharp, sweet, salt and spice.  When there are taste combos like this, alcohol-free cocktails really shine!

• 25ml Bax Sea Buckthorn
• 5ml szechuan and basil Syrup (100g Sugar, 10g Szechuan Peppercorns, fresh Basil)
• 15ml lemon juice
• 25ml fresh orange juice
• A pinch of sea salt flakes
• Ice
• Orange zest to garnish
To make syrup for around 15 cocktails measure 100ml of water and 100g sugar into a pan and heat to dissolve. Add 10g Szechuan peppercorns and a good handful of fresh basil. Stir well, put a lid on the pan and leave to cool. When the syrup is cold strain into a sterile bottle and refrigerate.
To assemble, combine the ingredients in a cocktail shaker and shake. Double strain into a martini glass and serve garnished with orange zest.

Summer Breeze

Makes you feel fine! Refreshing and bright, the perfect cooler with citrus, herbs and cranberry. This breezy menthol cocktail is great in a jug to pour at the table when you want a spritz to share.

• 4 mint leaves
• 2 teaspoons fresh fennel flowers
• 4 lemon balm leaves
• 2cm strip of orange zest
• 25ml cranberry juice
• Ice
• Extra herbs for garnishing
Muddle together the herbs and orange zest in the bottom of a cocktail shaker, add the other ingredients along with a scoop of ice cubes. Shake well and double strain into a glasses or a jug with ice. Garnish with more lovely summer herbs.

Old Fashioned

A Virgin Old Fashioned. Warming, smoky and bitter with sweetness and a little spice. This is the recipe that had everyone talking at Olympia in July.

• 20ml Jefferies ‘Not So Plain’ tonic syrup
• 20ml 3/4oz Tonic Spritz Syrup
• 10ml mocha Syrup
• Ice
• Orange Zest to garnish
Stir the ingredients together in a jug. Serve in a whisky tumbler poured over chunky ice. Garnish with a strip of orange zest and enjoy.

Rugosa Bitters

A vermouth style cocktail: bitter and fragrant. This one combines sitting at a Gallician bar during ‘Vermouth hour’ and the scent of roses wafting by in the hot early evening. Ahhh dreams…

• 5ml Grenadine syrup
• 30ml premium tonic water
• 30ml soda water
• Ice
• Orange to garnish
Mix the Sea Buckthorn and syrups together, pour into a glass with ice and then add the tonic and soda. Garnish with an orange slice or a strip of zest.

Planet Verbena

Tropical vibes from the Planet Verbena!  This is a happy cocktail with fruit flavours and refreshing aromatics.

• 5ml mango syrup
• Dash of Grenadine
• Lime juice
• 50ml soda water
• Kiwi fruit or lime to garnish
• Ice
Combine the Bax Verbena, mango, Grenadine and lime juice in a chilled glass with ice.
Top up with the soda water.
Garnish with fresh lime or kiwi fruit.

Hedge Hopper

The warming glow of bonfire night and toffee apples inspired this cocktail. Warming fruit and caramel blends perfectly with fragrant rosemary.

• A 5cm sprig of rosemary

Muddle the rosemary in the bottom of your cocktail shaker,  Combine the ingredients in a flask and fill it with smoke. Fill glasses or rustic cups with ice and garnishes, then pour the cocktail.

Cosmo Sin

A zingy alcohol-free version of this superb classic, here celebrating the luxurious flavours of Bax Sea Buckthorn.

• A squeeze of orange juice
• A squeeze of lime juice

Combine all the ingredients in a cocktail shaker give it a good shake and strain into a chilled Martini glass. Garnish with fresh lime.

Bax Botini

A sophisticated cocktail with the flavours of lemon verbena and bitter almond. Sweetness and fragrance come from grapes and rosemary, altogether a delicious treat.

• 75ml sparkling grape juice
• 5ml Orgeat syrup
• Rosemary to garnish

Combine the Bax Verbena and Orgeat syrup in a Martini glass. Add a few cubes of ice and top up with grape juice, gently stir and garnish with fresh rosemary.


This celebration of sunshine brings light, summer fruitiness to the fore. Sparkling and slightly sweet but still sophisticated and complex, this is a perfect alcohol-free party drink.

• 75ml lemonade

Mix the Bax Botanics and apple juice in a tall glass with ice, add half a slice of orange and top up with lemonade. Stir gently and serve.

Fennel Reviver

An alcohol-free version of the Corpse Reviver cocktail: Light and crisp with flavours of mild anise and menthol to energise and brighten your day.

• 50ml Bax Sea Buckthorn
• 2 mugwort leaves
• 1 mint Leaf
• 5cm strip of lemon peel
• 5ml elderflower cordial
• 10ml fennel infused syrup
• Ice

Fennel syrup makes 150ml
Measure 100ml of water and 100g sugar into a pan, add a good handful of fresh fennel fronds or fennel seeds and heat gently. Stir to dissolve the sugar when the syrup starts to bubble, put a lid on the pan and remove from the heat. When the syrup is cold, strain and refrigerate. – stores for up to 2 weeks
Muddle the mint, mugwort and lemon in a cocktail shaker then add the other ingredients and a few ice cubes. Shake for a few seconds then double strain into a martini glass over a large ice cube.
